Chocolate Soufflé

You will need:
10 oz. gourmet bittersweet chocolate chopped
10 TBS. butter
1 c sugar
4 large eggs

4 egg yolks
1 pinch salt
1/2 c flour
1. Butter and flour 10 ramekins.
2. Melt chocolate & butter in medium bowl set over
simmering water.
3. Remove bowl, cool chocolate mixture to luke warm.
4. In large bowl, beat sugar, eggs, yolks, salt (mix at high
with
electric mixer) until batter falls in heavy ribbons when beaters are
lifted (about 6 min).
5. Sift flour over mix and gradually fold in chocolate
mixture that has been cooled.
6. Divide among prepared ramekins - cover with
plastic wrap if you are going to refrigerate or freeze.
Baking:
1. Remove plastic wrap. Preheat oven to 400.
Place ramekins on baking sheet.
2. Bake until puffed and beginning to crack
(about 18 min if refrigerated, 19 if frozen). Middle will be soft.
